Why does Firefox say the add-on can access my data for all websites?
Because a proxy has to sit between the browser and every site it protects; that permission is what makes routing possible at all, and Firefox shows the same wording for every VPN and proxy add-on. What we do from that position is published in the privacy policy: route the traffic, and record nothing about the sites you open.
